BLT Salad

Summer is over and in effort to hold on to summer I am sharing one of our favorite salads that make for a quick and easy weeknight dinner. We usually add protein to the salad to complete the meal or some nights we just serve it as a side salad.

For the salad

4 cups romaine lettuce

3 cups arugula

2 cups cherry tomatoes

5-6 strips cooked bacon

Croutons

For the dressing

½ cup sour cream

5 tbsp mayonnaise

2 tbsp garlic powder

Fresh dill to taste

1 tbsp lemon juice

Yields: 4 servings

Step 1:In a large bowl, combine romaine lettuce and arugula

Step 2: Wash and dry, then cut cherry tomatoes in half. Add to the lettuce mix.

Step 3: Crumble bacon and add into bowl.

 

Step 4: In a separate bowl, mix together sour cream, mayo, garlic powder, dill and lemon juice.

Step 5: Pour sour cream dressing into bowl of salad and top off with croutons.

Serve and Enjoy!
